Leftover baked potatoes + eggs = breakfast!

We made these for breakfast before church one Sunday, and the kids LOVED them. It was super easy because I scooped out the potatoes the night before. In the morning, I just scrambled some eggs and poured them in, added some crumbled bacon and cheese and baked in the oven while I took a shower. They were yummy and fun! I got the recipe from this pin.
